A creative and curious couple embracing slow living, bold moves, and the magic of Montefrío.
We’re Jasmine and Andrew — two Australians who packed up our comfortable (but chaotic) Melbourne lives and swapped them for a village of 5,000 people, cobbled streets, and olive trees that stretch to the horizon.

When people ask us why Spain?, we always say: we didn’t just move for the scenery (though, let’s be honest — Montefrío’s view is outrageous). We moved for the feeling. The quiet mornings. The long lunches. The sense that life doesn’t always have to be so rushed, so loud, so "productive."
Jasmine is a designer and creative strategist with a love for branding, storytelling, and anything a little bit whimsical. She’s also the type to cry at a beautiful colour palette, rewatch romantic comedies set in Italy, and plan three future renovations while finishing none. She finds beauty in everything, from the shape of an old door to the exact colour of the sky at 8:52 PM in spring.
Andrew is a football coach, card shark, and Batman fanatic — Greek at heart and loud in volume. He’s the kind of guy who will make friends with your waiter, your neighbour, and your cat within the first five minutes. He’s deeply passionate about helping people (especially young men) find purpose through sport and mentorship, and never backs down from a deep, soulful conversation… even over eggs at breakfast.
Together, we run Under el Spanish Sun — a blog and YouTube channel where we share the real behind-the-scenes of moving to Spain, restoring our home, road-tripping through Europe, and learning how to live slower, deeper, and more meaningfully. We document everything from the magic (like flamenco under the stars) to the madness (like trying to open a bank account without fluent Spanish).
We’re not influencers. We’re two humans under construction, figuring it out one café con leche at a time. We don’t pretend to have all the answers — but we do believe in honest storytelling, shared experiences, and creating a life that feels good on the inside, not just the outside.
Montefrío has been the backdrop for the biggest, bravest chapter of our lives so far. We moved here not knowing a soul, not knowing the language, and not knowing exactly how it would all unfold — and yet, here we are. Home.
So if you see us in the plaza — probably with dusty shoes, a camera, and a basket full of veggies — come say hi. We’ll likely offer you a drink, ask your life story, and try to convince you to stay just a little longer.
